Kale, Beans, Tomato Soup...


Kale has become one of the trendiest vegetable. I have seen the kale chips that is available in the grocery store isle but have not try it out yet. However, I am a big kale lover. I enjoy eating my greens growing up. I guess I was the weird one who liked to eat the green in our family but we always had some greens. 
Adding kidney beans to any soup it becomes almost a meal. 


To make it extra healthy I added ground turkey, less fat.

Add onions, carrots, celery, and sautéed until wilted finally add kale and continue to cook everything is wilted. 


Now it is the time to add tomato. 



Top it off with grated parmesan cheese, add salt and pepper and serve warm...


What you need:

A bunch of Kale (yield 5 cups)
3 cups chicken broth
1 1/2 cups crushed tomato
1 can kidney beans
1 lb. ground turkey
1 white onion
2 carrots
1 stick of celery 
2 cloves of garlic
2 tbs olive oil
2 cups water
How it is done:

Add olive oil and sauté the garlic. Add the ground turkey and continue to brown the meat. 
Once the meat is brown add chopped carrots, celery, and onions and continue to sauté. 
Add kale and continue to cook until kale is bright green. pour in tomato and chicken broth, kidney beans, and add 2 more cups of water. 
Add salt and pepper to taste bring it boil. cover and simmer for about 40 minutes in a medium low heat. 
Serve and enjoy with cheese.

  1. That looks delicious! We've started making soups with lots of home cooked beans this Winter. I never would have believed it would make a difference, but it's so yummy that way. And I *heart* kale too, even though my boys don't always. :(
