Pancake B'day Cake...

This was a big surprise for little Nicolette on her real B’day. She woke up to eat her favorite breakfast but in a cake form.

 Usually I make silver dollar pancakes which are kind of small but this was a bit bigger. I used a 1/4 cup to pour the batter so I was able to get a bigger pancake. Then the assembly was easy, place them in the cake stand use syrup to keep them in place and pour the melted sugar icing and went to town with all the sprinkles we had at home. 

Simply placed a candle and surprised her early morning. What I would do next time is get a small B’day banner to install on the cake and I think it will be really cute!

Happy B'Day

Our Nicolette celebrated her fifth B’day and was very low key this year. I did not bake for her B’day for the very fist time due to the huge holiday baking we had at our place. 

We went to movies and saw “ Frozen” which was neat according to Nicolette. We are planning a big bash next year and more planning needs to be addressed. 

One of her gifts was a jump rope! She is getting the hang of it and I can’t wait till summer.

We read many books, but she enjoyed ice cream with chocolate cake.

Summer B’day...

It’s being a while, that I did not got a chance to blog because of Summer school. I was planning to enroll on a studio class for ART but I could not instead I took two serious SPED classes, No joke. I am glad it is over, Now  I can work on the stuff I missed. However, before I get carried away I want to blog on our camping trip. Yes, big brother turned fourteen this summer. I cannot believe my little boy is growing up.


He wanted to go camping and that is exactly what we did. We had a lot going on but it was a great break. 


We had bean- rice and salmon for dinner it was YUM.


We took our kayaks, I did not join this time to kayak instead stayed in to finish school work. 
We had a camp fire, and Niegel made the BEST s’mores. He totally scores a solid A on this delight. We did not buy any fire wood instead we gathered the wood around the camp site.




It was beautiful to sit by the fire to watch the wood burning. We gave his B’day present on his B’day he was happy. Nicolette was a happy camper as well this summer. We decide to have a cake at home as always and Niegel is embracing the teenage years.

Winter Break...


Nicolette turned 3 today... We celebrated her B’day. I did made this wonderful B’day cake just for us it was way too much cake for family of four. We will share with many as we can. I do not want it to sit for a longtime in our house. 
Nicolette went through all the roses. I was afraid given the time we cut the cake how she is going to sleep. She enjoyed every bit of it.  
Her big brother was a great help and enjoyed every bit of it. My friend wants me to make a wedding cake for her. I guess I did a great job. I did baked her 3rd B’day cake and it was fun. We will be celebrating her B’day party soon...

Yes, we had a small B’day gathering for my son who turned thirteen this summer. I cannot believe he is growing like a weed. I sometimes wonder who is this young man living with us where is my little boy. I do see my little boy sometimes appearing in this young man’s body… I guess we all went through this at one point.

We work hard to bring up responsible young adults… I guess that’s what mothers do… we worry on every little thing. I try to let him take responsibilities Niegel learn some challenging lessons during this school year, survived another moving(thank goodness it’s the same town, no school changing).

He did great; actually he helped me a lot during this move. I am thankful and grateful to my son who has helped me in every way. In our new old house with no air conditioning he asked me to bake. I know but I cannot refuse to bake his favorite lemon tart how I could do that to him on his B’day. So I did… It was hot, my first day of summer school second session.
He wanted soda, lemon tart, ice cream cake, salt water candy, liquorish, and pizza… we had a great time. Niegel was happy have his only grandmother present at his thirteenth B’day. We would be going to Border’s a lot to spend his fun Borders gift certificates.

He later thanks me for giving him a great B’day party and baking the lemon tart. I wanted to cry… but I was happy that he was grateful for little things… and not takes it as granted…

Our little Nicolette turned 2 years yesterday I cannot believed where the time has gone. We decided to have a family B’day party just us. However we did invited her best playmate to join her to celebrate her B’day. She had great time even though she was fighting a cold. I did make everything except for flowers. We had cake, tart, sandwiches, chocolate covered pretzel rods with tea. Its fun having homemade B’day cake… It didn’t go the way I planned with fondant icing may be we will celebrate this spring with fondant cake. It was challenging to find utensils when everything is boxed in storage.

She didn’t care about the chocolate icing over fondant, she had a blast with her friend. Her brother and dad helped me a lot to get everything organized for her B’day. Some of her presents we ordered for her are still  on the way. Thanks everybody who wished our little Nicolette a happy B’day and send presents. I hope you enjoy the pictures.
